Aloe vera in the kitchen

Aloe vera is a plant with many properties that not only helps to take care of us on the outside, but also on the inside. A great way to consume it frequently is by incorporating it into our recipes. What are the benefits of eating aloe vera? It is an excellent antioxidant. It is also good for digestion and for constipation or gastritis relief. It also helps to keep our defences in good condition, thanks to its quantity of vitamins and other components.

There are many recipes for eating aloe vera. We present three of them, ideal for any time of the year and, above all, for the summer when the heat is on.

Refreshing cucumber and aloe vera salad

Among the most suitable aloe vera dishes for summer is this very fresh cucumber and aloe vera salad, ideal on its own for a light dinner or with some grilled meat or fish.

Ingredients:

2 medium cucumbers.

Aloe vera pulp.

Extra virgin olive oil.

Lemon juice or Modena vinegar.

1 white yoghurt.

1/2 clove of garlic.

Pepper to taste (optional).

Salt.

Method of preparation:

1. To begin, peel the cucumber and grate it. Remove the excess water with some napkins and put it in a bowl. Add freshly ground black pepper and a pinch of salt.

2. Add the aloe vera pulp that has been soaking for a day, cut into small pieces.

3. Now, we prepare the sauce. Whisk the white yoghurt and add half a grated clove of garlic, extra virgin olive oil, vinegar or lemon juice and salt. Mix well until all the ingredients of the sauce are integrated.

4. Add the sauce to the salad and store in the fridge to cool.

This salad is very versatile and we can add all kinds of vegetables to it. Onions and tomatoes are some of the vegetables that combine best with the aloe and cucumber. And if you like, you can add a grilled chicken fillet cut into strips.

Aloe vera jelly

Gelatine is a food that we should all include in our diet. A food rich in collagen, proteins and minerals that helps to take care of our bones and joints. If we also add aloe vera, we will have a rich, calorie-free and very healthy dessert that will help us to stay strong against illnesses.

Ingredients:

2 sachets of neutral gelatine.

125 grams of brown sugar.

A splash of lemon juice.

A few grains of pomegranate.

Some fresh mint leaves.

Method of preparation:

1. The first thing to do is to mix the aloe vera pulp, previously washed and soaked for a day, with the lemon juice.

2. Now, make the gelatine according to the instructions on the packet. When it starts to boil, add the aloe pulp mixture, the lemon, the pomegranate seeds and the chopped mint. Stir well.

3. Put it in a mould and leave it to cool in the fridge until it is set.

Aloe vera gazpacho

Gazpacho is one of the most typical cold soups of the summer season. And for those who want an even more nutritious variation, you can try it with aloe vera pulp.

Ingredients:

1 kilo and a half of tomato.

1/2 cucumber.

A small slice of bread.

1 clove of garlic.

Aloe vera pulp.

Extra virgin olive oil.

Lemon juice or Modena vinegar.

Sal.

Ice cubes.

Method of preparation:

1. Peel the half cucumber and garlic and remove the stalks from the tomatoes.

2. Wash all the vegetables well and cut them into pieces.

3. Put all the vegetables, the aloe vera, the bread soaked in water, a little water, the oil and the salt in the blender.

4. Whisk until a compact paste is formed.

5. Put the paste obtained in a colander and place it in a large bowl underneath. Add water and stir with a spoon or ladle, allowing the gazpacho to drip into the bowl. The consistency will depend on the amount of water added.

6. Add the lemon juice or vinegar and taste. If necessary, adjust the oil, salt or vinegar.

7. Add a few ice cubes and serve well chilled.

A suggestion for presentation: We can serve the gazpacho in individual bowls with some chopped vegetables such as cucumber, tomato and white onion. We can also add some chopped egg or breadcrumbs.

How to use aloe vera gel in recipes

Many may wonder how to prepare aloe vera for eating. Well, it is quite simple. The first thing to do is to have an edible variety. Cut off a stalk and wash it thoroughly under running water.

We then open it and scoop out the pulp as if it were a steak. Next, wash it to remove the allantoin, the bitter part of the aloe. Finally, put the pulp in a bowl with water and leave it in the fridge for 24 hours. It is now ready to cook.
